It’s that time of year!
The temperature is getting warmer which means the snacks are getting colder! Who doesn’t love a good icy cold, refreshing snack? What if it was a HEALTHY snack, with only 3-4 ingredients?
Lets get side tracked for a minute and talk about a recent trend. You see them everywhere- your local cafes, the popular smoothie shops, some of the smaller health food stores and restaurants. Yes, I’m talking about the new craze- Smoothie Bowls.
That is exactly what this sweet treat is, we just kicked up a notch and cooled it down a little more!
It started when I was cleaning out the fridge on a hot day and happened to notice our berries were just about at the end of their rope, at that questionable point where people usually throw them away, especially when there are only 5-10 berries left. They were at the point I would typically toss them into muffins or a fresh breakfast loaf. It was just TOO hot to turn on my oven and I had my little side kick begging me for berries. So I grabbed the tub of Vanilla Chobani Greek Yogurt from the fridge with every intention of making some yogurt covered frozen berries to snack on. So we gave them a rinse and got to it!
Well, once they were frozen they didn’t go over too well with my texturally picky almost-five- year- old. Rather than toss out the fruit and wasting them as well as that delicious yogurt, I thought, lets toss these into the food processor and make some magic happen!
The berries were pretty heavily covered with the yogurt, to the point they were similar to a bark (with yogurt instead of chocolate, obviously), so I figured that adding them into the processor frozen would turn into a frozen yogurt, I added just a touch more yogurt from the fridge and started pulsing. The color was gorgeous and the texture was exactly like a softer frozen yogurt! My little humans were practically panting by my side begging to lick the spoon!
I poured it into some bowls and topped with organic pumpkin flax granola (my little’s favorite believe it or not) and that extra crunch was AMAZING! If I had extra avocado I likely would have added it to the food processor as well. But the great thing is, you can top this off with ANYHTING! I’m sure if you search #smoothiebowl on social media you can find some great ideas! As for us? We kept it simple. We leave in two days for a week long vacation and there is no sense in filling the fridge with food we won’t have time to eat!
So next time you’re thinking of tossing that fruit because its gotten too soft, get a little creative and try to make something new, rather than waste! If the first plan doesn’t work out, use your mommy brains and come up with another alternative. Trust me, you’ll be glad you did!
